Roasted Cauliflower + Halloumi Topped Hummus Plate

Last night’s leftovers…...Today’s toppings for our Pimped Hummus POT😛 How the smallest amount of leftovers can elevate your hummus pot to next level snacking. Last night it was Mexican 🌮 Tacos with roasted Cauliflower + Halloumi + Salsa and Coriander. TODAY it was sprinkled over our original Hummus and scooped with Pitta Chips! Double deliciousness! You will need:
1 x Cauliflower
1 x Halloumi Block
1 x Lime
3 x Whole Garlic Cloves
Seasoning blend of Paprika + Cumin + Chilli Powder
For the Salsa
10 x Chopped Cherry Toms
Handful of Coriander
Half a small Red Onion
1 x Lime
Salt to taste
For the Hummus Pimping
1 x Pot of Soffle's Olive Oil Hummus
Extra Coriander for toppings
Chop the Cauliflower into small pieces including the leaves and place in a roasting dish, mix with Olive oil, Lime, the Seasoning blend, 3 garlic cloves with skin ON, Salt + Pepper. Roast for 30 mins.
Then chop the halloumi into cubes and mix into the half roasted cauliflower. Mush the garlic cloves into the mixture. Roast for a further 30 mins or until desired crispyness is met.
Finely chop the salsa add Lime + Salt then set aside.
We then made Guacamole, had sour cream, Jalapenos and TACO wraps to hand for dinner - which were more than delicious. Then kept the left over cauliflower + Halloumi + Salsa for Hummus Pot Pimping the next day.
Hummus Pot Pimping + Plating
Take the back side of a spoon scoop and spread the hummus across a large plate then sprinkle your Cauliflower + Halloumi on top, then the Salsa + Fresh Coriander.
