2 x bags 165g Chilli and Garlic Pitta Chips
Half a block of cheese
2 x tomatoes chopped finely 1 x limes 2 x avocados
1/2 x Red onion
1 x tin pinto beans
2 x Tsp Smoked paprika
2 x Tsp Cumin

Step one, fry up your pinto beans with cumin, smoked paprika and salt and pepper to taste until they go soft and mushy. To break them down further use a hand blender or a masher.
Salsa! Stir together finely chopped tomatoes and onion with lime juice and coriander, salt and pepper to taste
With the other half of the red onion cut into thin slices, place in a bowl with apple cider vinegar and let it soak until the pink is vibrant
For the guacamole, mash up your avocados with the juice from one lime, salt and pepper to taste
Last prep step, lay out your Soffe's onto an oven dish, top with cheese and pop into the grill for 5 minutes at a time, checking the cheese has melted.
ASSEMBLE, be creative with your salsa, guacamole, sour cream and red onions. Cover the pitta chips with all of the toppings and a sprinkle of coriander to serve.
