Comforting Caribbean Soup

We've been cooking up in the kitchen and wanted to share this warming Caribbean soup with you, because a tropical Caribbean island is where we'd love to be right now. This soup is packed full of, some of our fav Pitta Chip flavours, Scotch Bonnet, Garlic, Rosemary & Thyme. All vegan, all delicious and garunteed to warm you up and bring you some comfort!


Recipe (Feeds 2):

1 x Onion

3 x Garlic cloves

1 x Potatato

1 x Sweet potato

1 x Large carrot

1 x Scotch bonnet

1 x Tin of kidney beans

1/2 Tin of coconut milk

Rosemary, Thyme & Bay leaves.

Season with salt, pepper & all purpose seasoning to taste.


Dumplings:

All purpose flour (200ml)

Water (100ml)

Salt (pinch)


Method:

Fry your onion and garlic for 2 mins until fragrant, then add chopped potatoes & carrot and continue frying for a few mins. Add your kidney beans and coconut milk. Throw in the bay leaves, rosemary, thyme & scotch bonnet and simmer down for approx 35 mins. You may want to add a splash of water to ensure all veggies are covered in liquid. During this time mix your flour, water and salt to make a dough, you want to be able to roll the dough in your hands so not too sticky. Using the palms of you hands roll the dough into little ball & sausage shapes. Drop these into the soup 15 mins before serving. Always taste the soup as you're going so you know if it needs a little extra seasoning. Enjoy!
